Tips & Tricks
- If you start with cold water, boiling the pasta will take about 25 minutes. If you start with hot water, you’ll cut the time in half. Use fresh pasta to cut the time by 2/3. Fresh pasta only needs 4-5 minutes to cook. Most grocery stores carry 9 oz options near the produce or cheese section.
- Cook pasta in an 8-quart pot with 2 tablespoons kosher salt.
- Feel free to add any meat or vegetables to the sauce. If you want to sneak in some vegetables, cook them for 2 minutes before adding the garlic. If you have picky kids, blend the sauce in a food blender before serving. Remember to remove the bay leaf first.
